Dirty Chai Hot Toddy | Jan 2017
Serves 2, because long winter nights need a partner in crime.
8 oz coconut milk (or half and half if you’re feeling over your New Year’s resolution)
4 oz water
1 cinnamon stick
2 cardamom pods, crushed
5-6 pink peppercorns
1 inch piece of fresh ginger, peeled and flattened
2 tbsp sugar
2 sachets of whole leaf black tea or 2 tbsp of loose leave black tea
2 oz espresso (or strongly brewed coffee)
2 oz good quality bourbon
Combine coconut milk (or half and half), water, spices, and sugar in a small saucepan. Bring to a boil, then reduce heat and simmer for 8 minutes, stirring occasionally. Remove from heat. Add black tea sachets and let steep for 5 minutes (longer if you really want that caffeine kick to the face). Remove tea sachets and strain out spices. Split the chai between two pre-warmed mugs and add one ounce of espresso and one ounce of bourbon to each. Put on your coziest pair of socks and enjoy immediately.
